Cottage soup with herbs

Ingredients for 4 people:

- 3 white onions

- 4 leaves of wild garlic

- 1 tablespoon tarragon

- 1 tablespoon chervil

- 10 cl white wine and a little water

- 1 sprig of fresh thyme

- 2 slices of stale farmhouse bread

- 40 g fresh sheep's cheese

Grill the chopped onions in a wok in a wood-fired oven.

Add the thyme, white wine and a little water.

Cook gently in the oven.

At the end of the cooking time, add the chopped herbs, the cheese and the slices of farmhouse bread.

Add the fresh herbs at the end of the cooking time. Simmer and serve hot.
