Spring stuffed artichokes

Ingredients for 4 peoples :

- 4 large white artichokes

- 400grs of mixed vegetable brunoise

- garlic

- 4 free range eggs

- 1 tablespoon chives

- 1 tablespoon parsley

- 5cl olive oil

- fleur de sel

- Espelette pepper

Cut the tops off the artichokes, then steam them. Remove the hay from the middle and garnish with the vegetable brunoise mixed with the eggs and herbs. Cook gently in the wood-fired oven. At the end of the cooking time, sprinkle with fleur de sel and chilli pepper.
