Ingredients for 6 persons :
- 400 g stale or fresh brioche
- 4 egg yolks and 4 egg whites
- 50 g raisins
- 40 cl whole milk
- 130 g sugar
- 5 cl brandy or pear or mirabelle plum brandy
- 200 g mirabelle plums or pears
Soak the crushed brioche in the hot sweet milk.
Add the yolks and raisins and mix well.
Leave to soak for 1 hour.
Then add the 5cl of brandy and the egg whites.
Mix gently and pour the mixture into a terracotta mould in which you have placed the pears, peeled into strips.
